The new school year is just around the corner, but summer heat is still in full force around here.
Pico de gallo is a fun and easy dish to make for guests or yourself! It’s also a great way to keep cool on those warmer summer evenings when it might be too hot to turn on the stove or oven.
CLASSIC PICO DE GALLO
- diced cherry tomatoes
- diced purple onion (tomato + onion should have 1:1 ratio)
- 1/4 cup chopped cilantro
- juice of 1 lime
- chili flakes (optional)
- salt and pepper to taste
- In a medium sized bowl, gently combine diced tomatoes, diced onions, cilantro, and lime juice.
- Add chili flakes and salt and pepper to taste.
- If possible, leave in fridge to marinate overnight to better marry the flavors, otherwise immediately enjoy with chips!
